Method

Wash the pears and lemon thoroughly, and sterilize your jars and lids.

Trim the stems and core the pears, then chop them into cubes.

Slice the lemon into 2–3 mm rounds and remove the yellow zest to prevent bitterness.

Pack the pears into the sterilized jars until they are one-third full and add two lemon slices to each.

Pour boiling water all the way to the top, cover with the lids, and let sit for 10 minutes.

Drain the water into a pot, bring it to a boil, pour it back over the pears, and let sit for another 10 minutes.

Drain the water a second time, add sugar, boil the syrup, and pour it over the pears for the final time.

Seal the jars tightly, invert them, wrap them up, and let them cool completely.
