Method
Thoroughly wash the pears and lemon, and sterilize your jars and lids.
Trim the stems and core the pears, then dice them.
Slice the lemon into 2–3 mm rounds and remove the yellow zest to prevent bitterness.
Pack the sterilized jars one-third full with the pears and add two lemon slices to each.
Fill to the brim with boiling water, cover with the lids, and let sit for 10 minutes.
Drain the water back into a pot, bring to a boil, pour back over the pears, and let sit for another 10 minutes.
Drain the water a second time, add sugar, bring the syrup to a boil, and pour it over the pears for the final seal.
Hermetically seal the jars, turn them upside down, wrap them in a blanket, and let them cool completely.
