Method

Mix flour with sugar and salt. Cut cold butter into pieces or grate it. Rub it into the flour until it resembles fine breadcrumbs. Add ice water and quickly bring the dough together, shape into a ball, wrap in plastic, and chill for 30-40 minutes.

Roll out the dough on parchment paper into a circle about 3-4 mm thick. Scatter the sliced cheese in the center.

Arrange the pears—cored and thinly sliced—on top. Fold the edges of the dough over the filling.

Brush the edges with an egg yolk and milk mixture. Sprinkle the pears with sugar. Cut small leaf shapes from any leftover dough and decorate the rim, brushing them as well.

Bake in the oven at 350-400°F (180-200°C) for 25-30 minutes until golden brown.
