Method
Rinse the pears and apples, pat them dry, and cut them into large wedges, leaving the skin on.
Transfer to a pot, sprinkle with sugar, gently toss, and let sit for 2 hours so the juices release.
Bring to a boil over low heat, add lemon juice, and cook for 5 minutes, then set aside for 2 hours.
Repeat the cycle: bring back to a boil for 5 minutes and let cool again for 2 hours.
On the third time, simmer gently for 15 minutes over low heat.
Pour the hot jam into sterilized jars, seal them, flip upside down, and wrap in a towel until completely cooled.
