Method

Rinse the peaches, blanch them, and peel if desired. Slice into even-thickness wedges.

Mix sugar with citric acid. Layer the peaches and sugar mixture in sterilized jars, pressing down gently and filling to the top.

Cover with lids without sealing. Place the jar in a pot with a towel on the bottom, fill with water to the neck of the jar, and slowly sterilize until the juice releases and the sugar completely dissolves. Shake occasionally and add more sugar as needed.

After sterilization, seal tightly, invert to check the seal, wrap in towels, and let cool slowly.

Store in a cool place.
