Patisson Squash Caviar
A flavorful winter vegetable spread made with patisson squash, root vegetables, and tomatoes, which makes a fantastic appetizer.

Method
Wash the patisson squash and peel off the tough skin. Prepare, peel, and dice the onion, carrots, and tomatoes.
Fry the patisson squash in a cauldron using vegetable oil. Sauté the onion and carrots separately over high heat.
Combine the patisson squash, onion, carrots, and tomatoes in one cauldron and simmer for 25–30 minutes.
Finely chop the garlic, celery root, and parsley root, add them to the vegetables along with salt and sugar, and simmer for another 15 minutes.
Blend the mixture using an immersion blender, pour in the vinegar, and simmer until thickened, about 30 minutes.
At the end, add the finely chopped parsley, bring to a boil, and pack the hot caviar into sterilized jars. Seal and let cool under a towel.
