Method
Finely chop the garlic, deseeded hot pepper, and parsley. Adjust the amount of chili to taste—you can use a third of a pod for a milder version or swap it for dried chili flakes.
Pour the olive oil into a cold skillet, add the garlic and pepper. Turn the heat to low and let it simmer for 5–8 minutes, stirring occasionally. The oil should become aromatic, and the garlic should only turn slightly golden.
Add the chopped tomatoes (canned or fresh blanched) and increase the heat to medium.
Bring to a boil, season with salt, and add a little sugar. Simmer for 10–15 minutes until thickened.
Taste the sauce. If needed, add more salt, sugar, or a splash of wine vinegar to balance the acidity. Stir in the parsley and mix well.
