Method
Cook the spaghetti in salted water for 2 minutes less than the package instructions, as they will finish cooking in the skillet. Do not discard the cooking water.
Heat olive oil in a skillet and sauté the diced cured pork over medium heat for 3-5 minutes, then add the chili pepper and cook for another three minutes.
Add the diced tomatoes, marjoram, Italian herbs, and sugar and salt to taste to the pork, stir well, and simmer for about five more minutes.
Transfer the spaghetti to the skillet, pour in a splash of the pasta cooking water, carefully mix everything together without breaking the noodles, and simmer until the spaghetti is al dente.
To serve, season the pasta with freshly ground black pepper, grated cheese, extra virgin olive oil, and garnish with fresh basil leaves.
