Method

Fillet the mackerel, then season with salt and pepper.

Chop the onion and garlic. Peel and dice the tomatoes. Slice the mushrooms (do not wash).

Sauté the onion, add the mushrooms, followed by the tomatoes, salt, pepper, and sugar. After a minute, stir in the parsley and garlic, and cook for one more minute.

Make two packets using parchment paper layered over foil. Place a portion of the filling sized to fit the fillet on the bottom of each. Lay the fillets skin-side up on top. Wrap, crimp the edges to seal, and wrap securely in the foil.

Bake in the oven at 180 °C (350 °F) for 15–17 minutes.

Open carefully—the steam will be hot! Serve immediately.
