Pan-Fried Pumpkin Chudu

Method

Peel and deseed the pumpkin beforehand, then grate it on a fine grater.

Dice the yellow onion finely and sauté in a skillet with vegetable oil over low heat until softened.

Process the walnuts in a blender or grate them.

Add the sautéed onion and walnuts to the grated pumpkin, then season the filling with salt and pepper.

For the dough, combine the flour with salt, pour in warm water, and knead the dough.

Cover the dough with a plastic bag or cling film and let it rest on the counter for 15 minutes.

Divide the dough into several portions, rolling each out into a thin, round flatbread.

Spread the pumpkin filling over one half of the flatbread, fold the other half over it, and seal the edges tightly.

Cook the chudu in a dry skillet over medium heat on both sides.

Brush the hot chudu generously with butter on top.
