Pan-Fried Apricot Hand Pies
Golden-brown and mouth-watering homemade pies with a juicy fruit filling. A wonderful treat to serve with tea on a summer afternoon.

Method
Sift the flour into a bowl and mix with the active dry yeast.
Add the sugar, vegetable oil, and salt.
Pour in warm water and knead into a soft dough. Cover with a kitchen towel and let rest for 20 minutes.
Meanwhile, wash the apricots, cut them into pieces, and toss with sugar.
Once the dough has risen, divide it into 4 portions. Roll each portion into a rope. Cut the ropes into pieces and shape them into balls the size of an egg.
Roll out each dough ball into a ~0.5 cm thick round. Add the filling. Pinch the edges tightly to seal and form a hand pie. Let the pies proof for 10–20 minutes.
Preheat a skillet and pour in vegetable oil. Place the pies into the hot oil (seam-side down). Fry over medium heat until golden brown on both sides. Transfer the pies to paper towels to drain excess oil.
