"Oyster" Cake

Method

First, let's make the syrup. Combine water, sugar, and lemon juice in a saucepan. Bring to a boil and simmer over medium heat for about 10 minutes. Remove from heat and let it cool.

For the dough, combine all the ingredients in a bowl and knead into a soft dough.

Pinch off walnut-sized pieces and score an "oyster" pattern on each using a knife. Arrange the shaped pieces on a baking sheet.

Bake in a preheated oven at 180°C (350°F) until golden brown on top and bottom.

Pour the cold syrup over the hot cake so it is completely absorbed.

Optionally garnish with chopped pistachios on top and serve.
