Method

Preheat your oven to 400°F (200°C). Wash, peel, and cut the potatoes into battons. Soak them in cold water for 10–15 minutes to remove excess starch. Then place them on a paper towel, cover with another, and pat dry thoroughly. Moisture is the enemy of crunch, so don't skip this step.

In a bowl, toss the potatoes with oil, garlic, and all seasonings except for the salt.

Line a baking sheet with parchment paper and spread the potatoes in an even layer. Bake for 30–40 minutes at 400°F (200°C). After about 10 minutes, check and gently toss to ensure even browning.

Season the finished fries with salt and serve hot—ideal with dipping sauce.
