Method

Slice the oranges into thin rounds and place them in a large pot or saucepan.

First blanch with boiling water, drain, then sprinkle with sugar and add a splash of water to prevent sticking.

Simmer over low heat for about 1.5 to 2 hours, stirring occasionally.

For the dough, beat softened butter, an egg, sugar, and flour together with a mixer, then knead by hand into a ball and roll out to about ¼-inch thickness.

Cut out circles slightly larger than the orange slices.

Arrange the dough circles on a baking sheet and top each with a candied orange slice.

Bake at 340°F for about 15 to 20 minutes and let cool completely.

Once cooled, dip each cookie halfway into dark chocolate and refrigerate until set.
