Orange Jam
A fragrant homemade orange and lemon jam that goes wonderfully with tea or makes a great winter preserve.

Method
Wash the oranges and lemons thoroughly, then cover with boiling water and let sit for 5-10 minutes.
Zest three of the oranges and both lemons (taking only the thin top layer) or cut into very thin strips.
Juice the citrus fruits. Do not discard the peels.
Pour the resulting juice into a large microwave-safe bowl, add 200 ml of water, and the zest. Wrap the removed white pith in cheesecloth and submerge it in the juice as well.
Cover with plastic wrap and cook in the microwave on high power for 20-25 minutes until the peel softens. Remove it, squeeze out the liquid, and discard.
Add the sugar, stir, and cook for another 30 minutes on high power.
To test, spoon a little hot jam onto a saucer. As it cools, the jam should visibly thicken.
Transfer the hot finished jam into clean jars and let cool completely.
