Method

Rinse the chickpeas and soak them in cold water for at least 3 hours.

Place the chickpeas and mutton into a cold cauldron, then pour in the water.

Bring to a boil and skim off the foam.

Add salt, pepper, and simmer on low heat for 3 to 4 hours.

Slice the onion into thin rings (you can lightly marinate it).

Arrange the chickpeas and mutton on a large platter, drizzle with a little broth, and top with the onions.

Serve alongside the broth.
