No-Knead Yeast Ciabatta

Method

Mix all ingredients together with a spatula and spread the dough out in a container.

After 45 minutes, perform the first fold (stretch the dough with wet hands, first along the long sides from both directions, then along the short sides from both directions).

After 30 minutes, do the second fold.

Another 30 minutes later, do the third fold.

After 40 minutes, divide the dough into three equal parts very gently and transfer them onto a floured cloth (linen or a waffle towel).

After 45 minutes, gently transfer the dough onto parchment paper and bake in a preheated 250°C oven with a baking stone for the first 10 minutes with steam, then for another 12 minutes at 210°C without steam.

Let it cool on a wire rack.
