Method
Hard-boil your eggs, let them cool, then chop them fine. Mix with minced scallions and season lightly with salt.
For the batter, combine room-temperature buttermilk, an egg, salt, and baking soda. Gradually whisk in flour until you get a slightly loose batter.
Lightly oil your baking pan. Pour in half the batter and spread the filling evenly over it.
Top with the remaining batter and sprinkle with sesame seeds if you like.
Bake in a preheated 350°F oven for about 60 minutes.
About 10–15 minutes before it's done, poke the pie in a few spots with a skewer to help it bake through evenly.
Let the pie cool slightly, slice it into portions, and serve.
