A quick, raw blackberry jelly made without cooking the berries, perfectly preserving their fresh flavor and aroma. A convenient homemade preserve for winter, to be stored in a cool place.

Method

Wash the blackberries, pour boiling water over them, and let them sit for 1.5 to 2 minutes to warm through.

Drain the warmed berries in a colander and return them to the pot.

Add the sugar in batches and blend the blackberries with the sugar using an immersion blender for 5 minutes until the sugar is completely dissolved.

If you prefer to remove the seeds, strain the jelly through a fine-mesh sieve for 5 minutes.

Ladle the jelly into jars and seal with lids.
