Method

Boil the potatoes in their skins, cool them down, peel, and cut into cubes.

Grate the cheese on a coarse grater.

Chop the mushrooms into small pieces and dice the onion, then sauté in vegetable oil until cooked through.

Combine the mushrooms with the onion, potatoes, cheese, and finely chopped parsley, season with salt and pepper.

Roll out the dough to a thickness of about 3 mm, cut into rectangles approximately 4×6 inches.

Beat the eggs and brush each rectangle, place the filling diagonally, and fold into a pocket shape.

Transfer to a baking sheet, brush with remaining egg wash, and bake for 15 minutes at 400°F.
