Method

Remove the stem end from the tomatoes, cut them in half lengthwise, and scoop out any green core if present.

Slice the onion into 1 cm thick rings.

Place spices on the bottom of clean, soda-washed jars, then layer 3 onion rings, tomato halves cut-side down until halfway up the jar, then a couple more onion rings, and tomatoes to the top.

Pack it down gently – don't crush it.

Line the bottom of a large pot with a kitchen towel and place the jars inside so they don't touch each other.

Add sugar, salt, vinegar, and oil, then pour boiling water over everything and cover with a sterilized lid.

Pour warm water up to the shoulders of the jars and pasteurize for 25 minutes after the water comes to a boil for 1-liter jars.

Seal the lids tightly and wrap the jars in a blanket upside down, lid-side down.
