Mint Jam
A refreshing mint jam with a splash of lemon juice that comes together quickly and pairs wonderfully with tea or as a spread for berry sandwiches.

Method
Rinse the mint, cover with water, and boil for 5 minutes after it starts bubbling.
Remove the mint sprigs (you can strain it), and return the broth to medium heat.
Stir in the gelling agent (Zhelfix) mixed with 1 tablespoon of sugar.
As it begins to thicken, add the remaining sugar and lemon juice, then simmer for 5–7 minutes.
Pour into sterilized jars.
Set aside in a warm spot for 1 hour, then store in a dark place.
