Mini Meat Kol Böreği
Traditional Turkish layered mini rolls with a juicy meat filling. A wonderfully crispy pastry to serve with tea or as a hearty appetizer.

Method
Place the flour in a bowl and make a well in the center. Add the yeast, sugar, and warm water. Add the salt around the edges of the flour.
Knead into a smooth dough. Knead for about 10 minutes until the dough becomes very smooth and elastic.
Cover the dough and let it rest for 15 minutes.
Divide the dough into 14 equal portions, roughly 60 g each. Shape them into tight, smooth balls.
Combine the vegetable oil with the melted butter.
Lightly dust each ball with flour and roll it out to a length of about 25 cm.
Brush the pieces with the oil mixture and stack them on top of each other. If the oil drips down the sides, gently spread it back over the dough.
Cover the dough tightly to keep air out and let it rest for another 20 minutes.
Sauté the ground meat with the finely chopped onion. Add salt and black pepper. Mix well and let cool.
Stretch each piece of dough out by hand into a thin sheet, as shown in the video.
Place the meat filling along the edge, roll it up while gently pulling the dough as you roll. Shape it into a mini böрек.
Arrange the pastries on a baking sheet and lightly brush the tops with oil.
Bake in a preheated convection oven at 190°C until golden brown.
