Method

1

Peel the apples and dice them into small cubes.

2

Dissolve the starch in a teacup of water.

3

Combine the apples, cinnamon, sugar, and the starch water in a skillet. Cook for 5–6 minutes, then remove from heat and let cool.

4

Mix together the butter, egg, sugar, salt, flour, and baking powder to form a soft dough.

5

Chill the dough in the refrigerator for about 30 minutes.

6

Pinch off a mandarin-sized piece of dough, mix in 2 tablespoons of flour, and rub between your hands to create a crumble.

7

Press the remaining dough evenly into greased muffin tins. You can use a glass or your hands to press it down.

8

Prick the bottom of each tart shell with a fork.

9

Spoon the apple filling into the prepared crusts.

10

Top each tart evenly with the reserved crumble.

11

Bake in a preheated oven at 180°C (350°F) using the top-and-bottom heat setting for about 30 minutes.

12

Allow them to cool completely before removing the mini tarts from the tins and dusting with powdered sugar.
