Whip your eggs with sugar and a pinch of salt until you've got a pale, fluffy foam. Sift in your flour mixed with cocoa and baking powder, then gently fold it all together with a whisk until the batter comes together.

Spread the batter evenly on parchment paper and bake it in a 350°F oven for 8-10 minutes until set. Let it cool completely, then cut it in half.

Soak your gelatin in cold water for 10-15 minutes.

Whip your cold cream to stiff peaks, then fold in the sweetened condensed milk and honey if you're using it. Just whip it for about 30 seconds more until everything's smooth.

Melt the gelatin over a double boiler or in the microwave, let it cool slightly, then mix it into the cream. Give it another quick whip with the mixer until it's all combined — cream's ready to go.

Spread the cream onto one cake layer, top with the other half, and chill it in the fridge for an hour.

Slice it into portions and if you want, finish it off with some melted chocolate on top. That's it — dessert done.
