Middle Eastern Baklava
A traditional Middle Eastern sweet made of delicate flaky pastry packed with rich nut filling and soaked in honey syrup. A wonderful dessert to serve with tea for festive gatherings.

Method
Coarsely grate the cold butter, then toss it with the flour, baking powder, and salt until crumbly.
Stir in the egg yolks, followed by the sour cream, bring the dough together, wrap it up, and chill in the fridge for 30 minutes.
Take it out, divide into 4 portions, and roll out as thin as humanly possible.
For the filling, finely chop the nuts into crumbs, mix in the sugar, vanilla, and egg whites, and combine thoroughly.
Assemble the baklava by layering the dough sheets with the nut filling in between, and brush the top with egg yolk.
Bake at 180 °C (350 °F) for 25–30 minutes.
Brush the hot baklava with a warm syrup made of honey and water, then pop it back into the oven for another 10 minutes until golden.
