Method
Cut the melon in half and use a spoon to scoop out the seeds and core.
Trim away the rind and chop the flesh into rough chunks—the smaller they are, the easier it will be to blend.
Place the melon in a blender, adding the sugar and freshly squeezed lemon juice.
Blend until completely smooth and uniform.
Pour the purée into a plastic container or glass dish, cover tightly, and place in the freezer for 2 hours.
Take the container out and stir the mixture thoroughly—this breaks up ice crystals, giving the sorbet a delicate texture rather than a frosty one.
Return to the freezer for another hour.
Stir once more and keep in the freezer until ready to serve (at least 1–2 hours).
