Melon and Nectarine Jam

Method
Rinse the melon, cut it open, remove the seeds, cut into small pieces, and peel away the skin.
Wash the nectarines, halve them, remove the pits, and slice into wedges.
Put the fruit in a jam pan, sprinkle with sugar, and let sit for 6–8 hours to release the juices.
Place over low heat, bring to a boil but don't let it boil vigorously, then cool completely; repeat this cooking process three more times.
Before the final heating, squeeze in the lemon juice and stir into the jam, bring back to a boil, remove from heat, and pour into sterilized jars, seal with lids, let cool, and store in a cool, dark place.
