Method
Gather your ingredients. The water should be warm so the chocolate melts nicely.
Mix the batter. In a bowl, combine the dry mix, oil, and water. Whisk or beat thoroughly until smooth, with a consistency similar to sour cream.
Add the chocolate. Don't fold all the chocolate into the batter right away. It's best to reserve about a third of the chunks and fold them in at the very end, right before spooning the batter into the tins.
Portion the batter into the tins. Use paper liners or grease the tins with butter. Do not fill the tins all the way—leave some room as the batter will rise during baking. Drop a piece of chocolate into each well.
Bake. Preheat the oven to 180 °C (350 °F) and bake for 35–40 minutes, until the muffin has risen and turned golden brown. Check for doneness with a toothpick or skewer: it should come out clean from the center.
Cool. Take the muffins out, let them cool slightly in the tins, and then transfer them to a wire rack to cool completely.
