Method
Season your meat mixture with salt and pepper to taste ahead of time. Mix it thoroughly until you get an even, uniform texture so the patties stay nice and juicy.
Shape the patties to an even size, about 120g each. You can use a 9cm cooking ring to make it easier, or just shape them by hand.
Arrange the patties on a baking sheet lined with parchment paper.
For the cheese topping, grate the cheese on a box grater. Mix in an egg, finely chopped fresh herbs, and mayo. Stir everything together until smooth and well combined.
Spoon some of the cheese mixture onto each patty and spread it out evenly on top. Then place a tomato slice on each one.
Bake in a preheated 170°C convection oven for about 16 minutes until cooked through and you get a nice golden, crusty cheese topping.
