Method

Prepare the filling: sauté the mushrooms in oil with salt and spices. Chop the fresh herbs, and grate or slice the cheese.

Combine the meat, egg, salt, and spices in a blender. Process until smooth.

Divide the meat mixture in half to form two chebureki: place the meat on a sheet of plastic wrap, cover with a second sheet, and roll out into a circle with a rolling pin. Remove the top layer of film, place the filling (mushrooms, herbs, cheese) on one half, use the bottom film to fold the other half of the meat 'dough' over the filling, seal the edges tightly (it helps to use wet hands), brush with egg yolk, and sprinkle with sesame seeds.

Bake in a preheated oven at 180°C (350°F) for 25 to 30 minutes.

Serve hot or cold.
