Method

Whisk together the warabi starch, sugar, and matcha powder. Mix the dry ingredients well so the matcha is evenly distributed and free of lumps.

Gradually pour in the cold water while whisking constantly until completely smooth.

Transfer the mixture to a saucepan and cook over medium heat, stirring continuously with a silicone spatula. After a few minutes, the mixture will begin to thicken and turn translucent.

Continue to cook for another 2–3 minutes after thickening, until the mass becomes very stretchy, smooth, and glossy.

Transfer the hot mochi into a lightly moistened mold or container. Smooth the surface and let it cool completely, then refrigerate for about 1 hour.

Turn the dessert out of the mold and cut into small cubes. To prevent sticking, occasionally wipe the knife with water. Coat the pieces in kinako and serve immediately.
