Method

Bloom the gelatin in cold water.

Heat the sugar and water over medium heat, stirring occasionally (you can add food coloring directly to the syrup at this stage)—do not boil! Cook until the sugar dissolves, bring to a boil, and add the bloomed gelatin.

Whip with a hand mixer; the mixture should lighten and significantly increase in volume. If the color is too pale because the mixture lightens, you can add a bit more. As soon as the mixture starts wrapping around the beaters, stop whipping.

Transfer to a piping bag and apply to a chilled cake. Make sure the glaze is not hot, otherwise the frosting on the cake will melt.
