Method

Whip the eggs with the sugar for about 10 minutes until you get a fluffy mixture. Add the kefir or sour cream and mix well. Stir in the semolina and flour, which has been pre-mixed with baking soda. Gently combine everything into a smooth batter.

Melt the butter, let it cool slightly, and fold it into the batter (so the eggs don't curdle). Mix thoroughly and let it rest for 10 minutes so the semolina has time to swell.

Grease a baking pan with butter, pour in the batter, and bake in an oven preheated to 200 °C (390 °F). Bake for about 30 minutes until golden brown.

Slice the finished cake into portions. Serve with heavy cream, dusted with powdered sugar, or drizzled with berry sauce.
