Mandarin Turkish Delight

Method

Extract 400 ml of juice from the mandarins.

Pour it into a saucepan, add the sugar and starch, and whisk thoroughly to prevent any lumps.

Place over the heat, bring to a boil while whisking actively. Then reduce the heat and simmer until it reaches the consistency of a medium-thick jam. Finally, add a heaping spoonful of butter and whisk well.

Grease the molds with butter and pour in the mandarin mixture. Refrigerate until completely set (preferably overnight).

Remove the set lokum from the molds, roll it in coconut flakes, and cut into bite-sized pieces.
