Method

Zest one or two thoroughly washed mandarins.

Peel all the mandarins, separate them into segments, and remove any white pith.

Place the peeled segments, sugar, water, and lemon juice in a saucepan, stirring gently so as not to break the segments. Let sit for a few hours so the sugar begins to dissolve and the mandarins release some juices.

Set over low heat and stir gently to avoid damaging the fruit.

Bring the mixture to a boil. Boil for 5 minutes, skimming off any foam.

Transfer the jam into a jar and seal with a lid. Sterilize for 10 minutes at 110 degrees.
