Method

Peel the mandarins and remove the membranes (you should have about 200 g of flesh). Place them in a saucepan, cover with water, and put on the stove. Boil for 10–15 minutes after the water comes to a boil until they become tender.

Drain the water and blend the mandarins into a smooth puree using an immersion blender.

Whisk the eggs with the sugar at maximum mixer speed until fluffy and pale white.

Add the mandarin puree to the egg mixture and stir to combine. Then pour in the melted butter (you can substitute it with neutral vegetable oil).

Fold in the dry ingredients (flour and baking powder). Gently mix the batter with a spatula until smooth.

Pour the batter into a baking pan. Bake at 160°C for about 50–60 minutes (check for doneness with a toothpick).
