Method

For the sponge, separate the egg whites from the yolks.

Whip the egg whites until stiff peaks form.

Add all dry ingredients to the yolks. Mix and gently combine the two mixtures. Beat gently with a mixer until smooth.

Pour onto a silicone baking mat. Smooth it out into a square shape. Bake in a preheated oven at 180°C for 5-7 minutes (adjust according to your oven).

Toast the milk powder until golden brown; it will clump up.

Then use a blender to break the clumps into a fine powder.

Pour 200 ml of milk into a saucepan, add the starch, toasted milk powder, and sweetener. Cook over low heat until thickened, stirring constantly.

Spread the cooled condensed milk over the sponge and roll it up. Wrap the roll in plastic wrap.

Refrigerate for one hour.
