Low-Calorie Bean Vinaigrette

A light, traditional salad made with boiled vegetables, sauerkraut, and beans, dressed with olive oil.

Method

Boil the vegetables, let them cool, and dice them.

Cube the beets, place them in a bowl, and drizzle with a little oil.

Add the finely chopped onion.

Dice the pickles finely and add them to the rest of the ingredients.

Do the same with the potatoes and carrots — dice and add them to the salad.

If the sauerkraut is too sour or salty, rinse it in cold water, squeeze it dry, and chop it into thin strips. Add it to the vinaigrette.

Drain and rinse the beans (or peas), then fold them into the mix.

Season with salt to taste, pour in the olive oil, and toss well.
