Loaded Baked Potatoes
A popular fast-food classic made at home: jacket potatoes baked in their skins and stuffed with a savory filling of sausage, pickles, cheese, and mayonnaise.

Method
Wash the potatoes, season with salt, drizzle with oil, and wrap each potato first in parchment paper and then in foil. Place them in a baking dish and bake in a preheated oven at 190°C (375°F) for 60 to 90 minutes, adjusting the time based on the size of your potatoes.
Prepare the filling. Dice the sausage into small cubes.
Dice the pickles into small cubes.
Grate the cheese using a fine grater. You can use any cheese you like, but it's especially delicious with mozzarella.
Combine the pickles, sausage, and mayonnaise in a bowl, and mix well.
Remove the baked potatoes from the oven. To check for doneness, pierce one with a sharp knife; it should easily slide all the way to the center.
Unwrap the top half of the foil and parchment. Make a lengthwise cut, but not all the way through, and open up the potato. Season with salt and pepper.
Slightly mash the inside of the potato with a fork and add a pat of butter.
Spoon the filling into the center of each potato.
Top with grated cheese and return to the oven for a few minutes until melted.
Your loaded baked potatoes are ready. Garnish with fresh herbs on top if desired.
