Method
Rinse the meat, pat it dry, and slice it into medallions.
Season each piece with salt and pepper to taste.
Grate the potatoes using a coarse grater.
Slice the onion into rings.
Slice the tomatoes into half-moons and toss them lightly in mayonnaise.
Grate the cheese using a coarse grater.
Mince the garlic through a press.
Finely chop the fresh herbs.
Lightly oil a baking sheet.
Layer the ingredients in order: meat, onion, potatoes, and tomatoes, then drizzle with mayonnaise.
Bake in the oven at 390–430 °F (200–220 °C) for 40–50 minutes.
5–10 minutes before it's done, brush with garlic, and top with cheese and herbs.
Return to the oven for just a couple of minutes until the cheese is melted and bubbling.
