Baked zucchini slices with cream cheese, garlic, and fresh herbs, rolled up in a tomato sauce. A simple and light dish that makes a great appetizer.

Method

Slice the zucchini thinly, arrange them on a baking sheet, season with salt, drizzle with oil, and bake in the oven at 200 °C (400 °F) for 10–15 minutes.

Combine the cream cheese, half of the grated cheese, chopped herbs, garlic, and spices to make the filling.

Place the filling onto each zucchini slice and carefully roll them up.

Grease the bottom of a baking dish with half of the tomato sauce, arrange the rolls inside, top with the remaining sauce, sprinkle with the remaining grated cheese, and bake at 200 °C (400 °F) until golden brown.
