Method

Combine the quark with the egg, flour, salt, and spices, finishing with the baking soda. The consistency should resemble a thick, slightly sticky curd mixture. Mix with a fork, then use wet hands to shape into two balls.

Gently press the balls flat right on the parchment paper to form two flatbreads. Bake in a preheated oven for 5 to 7 minutes.

Spread the sauce over the hot crusts by mixing together the tomato paste, kefir, and salt.
