Lightly beat your eggs with a fork. Sift together the flour and powdered sugar, add a pinch of salt. Pour the eggs through the sieve, then drizzle in your melted butter and oil. Warm milk goes in gradually, a little at a time, until you get the right consistency.

Split your batter into three bowls: keep the largest batch plain, mix a teaspoon of cocoa into the medium portion, and stir three teaspoons of cocoa into the smallest one. Pour each into a squeeze bottle or gravy boat—makes things a lot easier.

Get your pan hot. Start by squeezing out random dots and dribbles of light batter, then add a few touches of the darker batter around the edges. Pour the light batter over everything to fill it in, then cook using the same technique on the other side.
