Take the butter out of the fridge ahead of time. Preheat the oven to 180°C (350°F).

Beat the softened butter with the sugar. Add the quark and beat again. Beat in the eggs one at a time, then add the poppy seeds, lemon juice, and zest. Mix until smooth.

Combine the flour with the baking powder and add to the batter. The batter should be fairly pourable. Spoon it into muffin cups, filling them two-thirds full.

For the streusel, rub cold butter, flour, and sugar together with your hands or in a food processor until crumbly.

Bake the muffins for 35–40 minutes. Do not open the oven for the first 30 minutes so the pastries don't deflate. Check for doneness with a toothpick — it should come out clean.
