Method

Lightly roll out the puff pastry, place it in a pie dish, and dock it with a fork. Cover with parchment paper and weight it down with baking beans or pie weights.

Bake in a preheated oven at 200°C (400°F) for 15–20 minutes.

For the custard, whisk together the eggs, heavy cream, nutmeg, salt, and pepper.

Remove the dish from the oven and take out the parchment and weights.

Layer the filling: pre-blanched broccoli, diced fish, and grated cheese.

Pour the prepared custard over the filling.

Bake in a preheated oven at 180°C (350°F) for 45–50 minutes. Turn on the convection fan 10 minutes before the end of baking to get a golden crust.
