A quick and lightened-up take on classic lasagna made with ground chicken breast and tomatoes—no béchamel sauce needed. Perfect for a satisfying lunch or dinner when you're short on time.

Method
Grind the chicken breast (removing all the fat) together with one small onion. Brown the mixture in a skillet for about 7–10 minutes.
Add canned tomatoes in their juice (or one large fresh tomato, peeled) to the meat. Season with salt and pepper, and toss in your favorite herbs if you like. Simmer for about 10 minutes—you want to keep some of that liquid in there.
Grate the cheese.
Get your baking dish ready. Before you start layering, spread a thin layer of the meat sauce from the skillet on the bottom.
Now build it up in layers: pasta sheets, meat sauce, a sprinkle of cheese, then pasta sheets again, meat sauce, cheese. Keep going until you've used up all your meat. The top layer should be meat sauce and cheese.
Cover the dish with foil and poke holes all over it. Bake in a preheated 350°F oven for 30 minutes. Then remove the foil and bake for another 15 minutes.
