Peel the apples, core them, and cut them into bite-sized pieces. Medium wedges work best so you can actually taste the apples in the finished strudel.

Sauté them in butter over high heat. Add the sugar, cinnamon, and vanilla straight to the apples and caramelize for about 5 to 7 minutes.

Roll out the dough well, but not too thin—it doesn't need to be paper-thin. Make cuts along the edges, lightly sprinkle the center where the apples will go with breadcrumbs, and arrange the apples on top in a tight layer.

Fold the dough in a herringbone pattern, brush with an egg yolk and milk wash, sprinkle with sugar and almonds, and bake in a preheated oven at 180°C (350°F) for 30 to 35 minutes.
