Method
Preheat your oven to 350°F (180°C). Grease a baking dish with oil or line it with parchment paper.
Place the lavash in the dish to form a "bowl"—you can gently tuck the edges in to hold the filling.
In a bowl, mix the cottage cheese with the eggs, seasoning with salt and pepper to taste. If the cottage cheese is dry, add 1-2 tablespoons of milk or sour cream.
Spread the cottage cheese and egg mixture into the lavash, then top with sliced tomatoes and spinach (or herbs).
Sprinkle with grated cheese and, if needed, fold the edges of the lavash slightly or just leave it open-faced.
Bake for 15-20 minutes in the preheated oven until golden and the cheese is nicely melted and bubbly.
Let the casserole rest for 3-5 minutes, then slice into portions and serve warm.
