Method

Heat up the fire and pour oil into your pot.

Dice the tail fat, render it down, then add your diced onions and let them cook until golden.

Cut up your carrots and lamb, add them to the pot, season with salt and cumin.

Once the meat is nearly cooked through, add your rice and water, cover with a lid.

Let the rice absorb all the liquid, then mound it up into a pyramid shape.

After 15 minutes, gently fold the pilaf together without breaking the grains.
